Why not take part in Bramley Apple Week celebrations by trying these scrummy chicken and Bramley apple parcels. Served with salad, corn on the cob and salsa, they make the perfect BBQ treat.
Ingredients
- 8 Boneless chicken thighs (or chicken breasts)
- 1 Bramley apple
- 8 Sage leaves
- 8 Rashers of smoked back bacon
- Tomato salsa (to serve)
Instructions
- Before you get started you will need to prepare your ingredients. Begin by peeling your Bramley apple, removing the core and slicing it into 8 segments.
- Once your apple is ready, open your chicken thighs out (or alternatively butterfly your chicken breast by slicing along the side and opening them up), then top each one with a slice of apple and sage.
- Roll up your chicken and stretching your bacon rashers, use them to wrap your chicken. Use a cocktail stick to secure together and set to the side.
- Now you have got two options. If you are feeling daring you can cook your chicken parcels on a hot barbecue until cooked through. Alternatively you can pop them under the grill for 15-20 minutes (remembering to turn them occasionally).
- Once cooked through, serve with a side of salad and a dollop of salsa.
