This is an ace way to stretch out the last bits of chicken and to use the stock that you made from the bones. Perfect for a cold day or when you’re feeling a little bit under the weather!
Ingredients
- 2 tablespoons olive oil
- 1 small onion, peeled and chopped
- 2 garlic cloves, minced
- 2 medium carrots, peeled and chopped
- 2 celery stalks, chopped
- leftover chicken
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 quarts chicken stock
- 8 ounces egg noodles
- pinch of salt and pepper
- Chopped, fresh parsley to garnish
Instructions
- In a large soup pot, add the olive oil and set heat on medium.
- Add onions and garlic and saute for a minute to release the flavors.
- Add carrots and celery and saute for an additional five minutes. Add the leftover chicken, thyme, bay leaf, and chicken stock. Cover and set heat on high. Bring to a boil and then simmer for ten minutes. Add noodles and simmer for another ten minutes.
- Garnish each bowl with chopped, fresh parsley.
