Too tired to cook when you get in from work? Then we have got just the thing – chicken thighs cooked for 7 hours in a delicious sauce of dice tomatoes, onions, garlic, peppers, mushrooms, red wine and chicken broth.
Ingredients
- 1.3kg Bone-in chicken thighs
- 395g Diced tomatoes
- 170g Tomato paste
- 230ml Chicken broth
- 1 Onion
- 4 Garlic cloves
- 1 Green bell pepper
- 70g Mushrooms
- 100ml Red wine
- 1 tsp Dried Italian seasoning
- 1/8tsp Pepper
- 1/2tsp Salt
- 2tbsp Cornstarch
- 3tbsp Water
Instructions
- Begin by skinning your chicken thighs. Then using a fresh knife, peel and slice your onion, mince your garlic, chop your pepper and slice your mushrooms.
- Once your ingredients are ready place your chicken, tomatoes, tomato paste, chicken broth, onion, garlic, pepper, mushrooms, red wine and all your seasoning into a slow cooker (or a Crockpot if you haven’t got a slow cooker), cover and leave to cook on low for 6-8 hours until your chicken is tender and cooked through.
- If you want your sauce to be thicker, mix some cornstarch and water together, and add to your slow cooker. Leave to cook for a further 15-20 minutes on low, then serve on a plate of freshly boiled pasta.
