Gluten Free Chicken Cacciatore with Pancetta

Looking for ideas to spice up your Valentine’s day? This delicious chicken cacciatore with pancetta is incredibly easy to make (just 50 minutes); tastes wonderful served with mash or pasta and is completely gluten free.
Ingredients
  • 4tbsp Olive oil
  • 1 Whole chicken (cut into pieces)
  • 6 Slices pancetta
  • 2 Onions
  • 60g Fresh mushrooms
  • 1tbsp Chopped parsley
  • 1tbsp Chopped basil
  • 1tsp Salt
  • 225ml White wine
  • 450g Tomatoes
Instructions
  1. Before you get started you will need to prepare your chicken, pancetta, onions, mushrooms and tomatoes. Taking a sharp knife, remove the meat from your chicken, cut into pieces and place into a bowl. Next using a clean knife, dice your pancetta, peel and chop your onions, slice your mushrooms and dice your tomatoes.
  2. Once your ingredients are ready, begin heating your oil in a pan over a medium flame, then add your chicken. Cook until brown, then remove from the pan.
  3. Next add your pancetta and sauté for 2 minutes, before introducing your onions and mushrooms. Continue sautéing until your onions are translucent, then add your chicken back into the frying pan.
  4. Sprinkle your chicken with parsley, basil, salt and a dash of pepper, cook, then add your wine and tomatoes.
  5. Cover your pan and leave to simmer for 25-30 minutes, remembering to turn your chicken once whilst it is cooking.
  6. Remove your chicken first from your frying pan and then cover in your sauce.
  7. For the perfect dish, try boiling up some spaghetti for 15 minutes, whilst your chicken is simmering. Drain and tip onto a plate before finishing with your chicken and sauce.
